These bell peppers are different in more ways than their colors! They all start green and change colors as they mature (from green, yellow, then to red!!) In-season alert!! These odd, knobby vegetables slightly resemble ginger but Sunchokes will become your new best friend when you realize that you don’t have to peel them! What are they anyway? Sunchokes can be compared to potatoes, both in how they're grown underground and their nutty/sweet flavor profile; they can be roasted, fried, boiled, steamed, or grilled!

Fun fact: They are native to the eastern US and are the root of a type of sunflower!

Last week, growing regions experienced ice at the beginning of the week and rain towards the end of the week; this slowed down harvesting crews and delayed product. Thankfully, this week the weather is cooperating and starting to warm up (asides from an anticipated freeze on Wednesday.) #whenfreshmatters #tandtproduce
