Plantains are bananas’ starchier, older relative and they absolutely thrive in savory dishes. Don’t be afraid of fully brown plantains because the riper they get, the moister, tender, and sweeter they get.

Here’s how to use each ripeness stage of a plantain:

Green: Very firm and starchy. Best used as plantain chips.

Yellow: Less starchy but cutting into thick slices will hold their shape on the grill or caramelize nicely.

Black: the softest and sweetest of all. Mash to add body to soups and sauces, instead of using potatoes, or roast and sprinkle with cinnamon for dessert.

Another sign to look for is the little yellow hairs on the stem. Since the tomatoes are still reaping the nutrients and water from the vine, the greener and thicker the vine, the better! #whenfreshmatters #tandtproduce
